In order to guarantee High Quality, el Kafetal has adopted the following quality control procedures:

  1. Correctly identifying customer needs and expectations.
  2. Designing a product which will meet customer expectations.
  3. Designing a product which can be consistently and economically manufactured with no mistakes.
  4. Developing clear and adequate specifications, standards, procedures and equipment for manufacture.
  5. Processing packages by a system called Quality Control in which the packages are inspected before being sealed and delivered.

Purchasing the Coffee Beans

el Kafetal has the objective to acquire different types of coffee beans, from national and international markets, in order to achieve the quality policy.

Process in Situ

Guidelines for work process about:

  1. Purchasing: In order to buy the best coffee beans in regards to size, color, homogeneity and mass it is important to study the external characteristics to avoid beans that look sick or unhealthy. Inspection of the coffee beans continues by checking humidity, foreign particles, defects, malformations, etc.
  2. Roasting: This process is obtained by using healthy coffee beans, of homogeneous size, form, weight and uniform color. Also by obtaining coffee beans with the best characteristics of flavor, color, mass, degree and style of roasting. The coffee beans are placed in a drum and roasted to the required temperature for the variety needed.
    This is very important because it is the process by which the coffee acquires its name in terms of flavor, aroma, acidity and body.
  3. Grinding: After obtaining optimum roasted coffee beans in regards to obtain aroma, freshness, particle size and type, the beans are now ready to be ground. The grinding process is also a very important because the coffee adopts strength and flavor based on how it is ground.
  4. Packaging: The employees in charge of the packaging process of the ground coffee, should know and keep in mind that a hygienic handling of the product will determine longer and higher quality store life.
    The roasted ground and packaged coffee will be stored in a separate place from the area where the roasting and grinding processes take place. The transportation of the coffee will be in containers covered in order to protect it from the pollution of potential elements such us: water, dust, insects, humidity, bad smells and strong aromas. At the same time once the roasted and ground coffee is being unloaded, the area should maintain hygienic conditions to avoid contamination of the coffee packages.
  5. Caffeine extraction: The process of obtaining instant coffee requires a lot of care. It is here where special attention should be taken in regards to moisture, temperature and the necessary pressure needed to obtain an optimum output without affecting the quality of the coffee.
  6. Evaporation: After extraction has been done, the coffee goes to the evaporator machine were the coffee is concentrated in the drying tower by freeze drying.
    The instant coffee powder spray dried is the result of atomizing the liquid extract of coffee inside a camera where the particles are dried by a constant re-circulation of warm air.
    To obtain freeze dried coffee, first the coffee extract is frozen and after, the humidity content is eliminated by increasing the temperature in a vacuum area.
